Easy, Healthy, No Bake Snack Bites

No Bake Snack Bites

My kids are always, I mean always, looking for a snack.

It’s hard to keep snack items in the house that are somewhat healthy and don’t cost a fortune. While they are good about grabbing an apple or some other piece of fruit, it’s nice to have something different to snack on as well.

I like my new kitchen and now that we are settled in I have been back to meal planning, making dinner most nights, and even a bit of baking.

Over the weekend I made a couple of batches of these little protein bites. They are easy to make and the kids, and my husband, loved them.

They are great to pack in a field trip lunch, after homeschool snack, a minutes before dinner is ready snack when some of my kids may just expire from hunger snack, or out the door before a sports event snack.

Whatever it is, this is a good snack!

No Bake Snack Bites

Protein Snack Bites Recipe

1 cup Old Fashioned Oats

2/3 cup toasted coconut

1/2 cup ground flax seed

1/2 cup peanut butter {other butters could be used for allergies}

1/3 cup honey {I tried agave, but they didn’t hold together as well}

1 tsp. vanilla

Mix all ingredients together, chill in fridge for about an hour, and then roll into smallish sized balls.

Store in the fridge for up to one week, but I’m pretty sure they won’t last that long!

    We’ve been making these for awhile. The kids LOVE them. I like to rotate our snack list every two weeks. And I throw these as well as a couple of others in the mix amongst the popcorn, fruit, smoothies. They are definitely a nice, healthy break from the same old, same old.

    Hi, these look yummy, and I can’t wait to try them. Do you make a lot of different healthy high protein snacks? If so, do you have any that that don’t contain the carbs, you would be willing to share?

      Hi Sarah, thanks for reading! Unfortunately we like carbs around here, sorry. I don’t think I have any snack ideas that are carb free.
