A fast, easy, healthy breakfast. Â It doesn’t get any better than that. Add in the fact that this is a make ahead recipe that takes about 10 minutes to put together and it’s even better.
I like to try new recipes, I have a whole slew of recipes on my pinterest boards, but like most busy moms, I have my “go-to” recipes. Â Recipes that I use over and over, recipes that my family actually likes to eat, recipes that are filled with ingredients that I almost always have on hand. Â Swiss Oats is definitely one of those recipes. Â
I most often prepare this recipe on Sunday evenings, so it’s ready to go for Monday morning. Â Anything to help Monday morning go a bit more smoothly.
Ingredients:
This is not a precise recipe, but very flexible, use what you have on hand and what your family likes to eat.
– Fill container of choice with good amount of oatmeal {I use store brand rolled oats, I stock up when it goes on sale so I almost always have it on hand}
– Pour milk {I use almond or almond/coconut combo} until is just covers the oats
– Add in chopped apple, raisins, craisins, or for this particular recipe I used dried apricots. Â I have to say the apricots were delicious!
– If desired drizzle a bit of honey {you could also use agave or even maple syrup} over the top
– Add a dash of cinnamon
– Put a lid on the container, put it in the fridge and forget it until morning.
In the morning I stir it up, add a bit more milk if desired, another sprinkle of cinnamon and a sprinkle of coconut. Â Sometimes the kids will add a dollop of yogurt on top. Â I serve the Swiss Oats with a portion of Chocolate Peanut Butter Shakeology, and the kids have a great breakfast.
